Fabio Monteiro, now Head Sommelier at Restaurant 1890 at The Savoy Hotel in London—part of the prestigious Gordon Ramsay Restaurant Group—has built a rich and diverse career rooted in a lifelong passion for hospitality.
Growing up in a family business, Fabio was immersed in the world of service from an early age. His journey took him to Spain for several years, followed by an exciting chapter at sea with Cunard, where he delivered the renowned White Star Service while travelling the world. Returning to Portugal, he brought his international experience to luxury resorts such as Six Senses Douro Valley and Vila Vita Parc.
In November 2023, Fabio joined the Gordon Ramsay Group in London, beginning at the River Restaurant before taking the lead sommelier role at Restaurant 1890 in April 2024, where his global expertise and dedication to excellence continue to shine.
