After working at the Petit Nice *** and Anne-Sophie Pic, Lausanne **, I decided, five years ago, to move to London. The dynamism of the wine industry in this city is extremely attractive. Fred Brugues took me under his wing at Sketch. I eventually became head sommelier of the Lecture Room and Library and we had the extreme gratification to gain the third Michelin star.
Coming from Michelin background, it was important to me to discover the environment of Private Member’s club. I opened The TwentyTwo in June last year, as head of wine with a solid wine list of 850 BIN. The TwentyTwo, as a group, has other openings planned in UK and New York. Very exciting projects, 2024 will be a busy year for me.
